One of my resolutions for the New Year is to make more healthy lunch options for myself. I get so busy planning dinner that I sometimes forget I need to eat lunch too! Most of the time I just eat some yogurt and fruit, or some leftovers from the night before, but that can get boring pretty quick. I need more variety in my daily diet, so I decided that each week I’m going to make one or two healthy lunch options to eat throughout the week, and of course I’ll be sharing them with you!
Juicy chicken, sweet grapes, crunchy celery, and nutty almonds tossed with a tangy yogurt dressing equals pure chicken salad bliss! My chicken salad has a little bit of savory and a little bit of sweet and is easy on the waistline, depending on how you choose to eat it. Using yogurt instead of mayo cuts down on calories, while adding more protein as well as calcium, it also gives the chicken salad a wonderful and unique flavor.
Chicken salad is one of those classic sandwiches that can be pretty boring, but if you add different flavors and textures to make it interesting, you can give a fresh twist to an old favorite. There are many different ways to serve up this tasty chicken salad so that you won’t get tired of eating it. My personal favorites are in a wrap or on crackers, but it also makes a great appetizer. Try serving it on top of specialty crackers, toasted baguette slices, or in butter lettuces leaves for an elegant starter at your next party.

SAVORY AND SWEET CHICKEN SALAD
This versatile chicken salad can be served as sandwiches, wraps, on crackers, or in lettuce cups. Make a batch on the weekend to have all week for lunches and snacks.
¾ Cup Plain Greek Yogurt or Mayonnaise
2 Tbsp. Fresh Lemon Juice
¼ Cup Fresh Parsley, freshly chopped
Salt and Freshly Ground Black Pepper
2 Cups Shredded Chicken, from a rotisserie chicken, about 2 breasts
¾ Cup Red Grapes, halved
½ Cup Celery, thinly sliced
¼ Cup Slivered Almonds, toasted
Flour Tortillas, Wheat Bread, Crackers, or Lettuce, for serving
In a large bowl whisk together the yogurt, fresh lemon juice, parsley, salt and the pepper. Add the chicken, grapes celery, and almonds and mix well with the dressing. Serve as wraps, sandwiches, as an appetizer on crackers, in lettuce cups, or on a bed of lettuce.
