Contrary to what most people think of me, I wasn’t always a food snob. I ate pretty much everything as a kid – except for candy, soda, cake, chocolate milk, and pizza. I was one of the very few kids in the cafeteria line that chose the white milk over the chocolate. I was also the kid that brought her lunch on pizza days because I didn’t like pizza. I know, I get that look a lot.
So, why the post on French bread pizza you ask? Well, for starters it was one of the meals that I enjoyed a lot during my cafeteria days. Something about crunchy, thick bread topped with sauce and cheese just speaks to me. The cafeteria version was straight from the freezer, but I liked it nonetheless.
I haven’t had a French bread since my elementary school lunches, and for some reason I thought of it a few weeks ago. I decided to make my own, homemade version of this fun childhood favorite.
I wanted to make these French bread pizzas a little more special than the ones I enjoyed as a kid. Really though, how do you improve on saucy, cheesy bread? Make it saucy, cheesy garlic bread!
To do this, I first toast up the bread and then rub each piece with a cut garlic clove. This method imparts a nice mild garlic flavor and kicks it up in the flavor department. Then comes the sauce and cheese – and you can get creative here with your favorite seasonings and pizza toppings, but I went for the classic. Now just bake them until golden and bubbly and you’re done!
These pizzas seriously can’t get any easier. You literally just toast some bread, rub it with garlic, top with sauce and cheese and bake. Boom. Dinner is served. Or lunch…or a snack. Another plus? You can assemble ahead of time – perfect for meals on the go or after school snacks.
I almost feel silly sharing this “recipe” because it’s so simple. I decided to share anyway just incase you forgot about them like I did! It’s a fun meal to make and eat. I had it for dinner last week with a big salad. And I must say, this homemade version is much better than the frozen one!

French Bread Pizza
Toasted garlic bread is topped with sauce and cheese to make the childhood favorite – french bread pizza! One bite and you’ll be back to your school days.
1 Loaf Soft French Bread*, sliced in half lengthwise, and then each cut into 2 pieces so that you have 4
Extra Virgin Olive Oil
4 Garlic Cloves, peeled and halved
1 Cup Tomato Sauce or Pizza Sauce*
2 Cups Mozzarella Cheese, grated
Kosher Salt and Freshly Ground Black Pepper, to taste
Preheat the oven to 450º. Toast the French bread until pale golden in color, about 10 minutes. You’ll want to watch the bread carefully here – you don’t want to over toast. Once the bread is toasted, take it out of the oven, drizzle with olive oil and rub each piece with the cut garlic cloves. Top each piece with a ¼ cup of tomato sauce and ½ cup of cheese. Season each with salt and pepper if desired. Bake the French bread pizzas at 450º for 8-10 minutes, or until the cheese is bubbly and the bread is crisp.
*I like to use soft french bread for these because the really crisp stuff can get too tough after toasting and baking. If you can’t find it, you can use any soft loaf-style bread.
*You can use plain tomato sauce or pizza sauce if you wish. The pizza sauce will be already seasoned. I like to use plain tomato sauce and mix in my own seasonings – oregano, garlic, salt and pepper.
Make Ahead Instructions:
- Assemble the pizzas per the recipe, but don’t bake. Cover and refrigerate.
- When you’re ready to eat just pop them in a 450º oven for 10-12 minutes.
