I am in complete disbelief that Labor Day is here already! Seriously, wasn’t it just Memorial Day? I think I might cry when summer ends – actually I know I will. Mostly because I will have to say goodbye to all of the summer produce. Thankfully, my CSA runs year round, so at least I’ll be able to enjoy fall and winter produce!
Let’s stick to summer for now – especially since it shows no signs of leaving soon. The weather forecast has us at or above 90 degrees for the next week. So, enjoy your labor day by soaking in the sun and all of the fresh produce – it will be gone before you know it!
I know that I just posted this on Tuesday, but I think it’s a great recipe for cookouts and parties. It’s SO easy to make and it doesn’t require a lot of ingredients. This recipe is gluten-free, dairy-free, and vegetarian. It can also be made vegan by swapping out the honey for a different sweetener. If you’re looking for a fun, but healthy side for your party you have to try this!
This appetizer is always a crowd pleaser! You can easily make these ahead of time too – just cook them, cool them completely and then refrigerate in an airtight container. When you’re close to eating just reheat them in the oven. I serve mine simply with sour cream, but I know they would be amazing dipped into my sriracha sauce. This recipe is gluten-free, dairy-free (without sour cream), and vegetarian.
3. Grilled Peach and Arugula Salad
Peaches are one of my favorite fruits and you can only have the best during summer. Enjoy them while you can in this tasty salad! The grilled peaches are amazing over a bed of arugula, goat cheese, and walnuts. Drizzle it all with a homemade mint vinaigrette and you’ll be the hit of the party! This recipe is gluten-free and vegetarian.

Great roundup! I particularly like the sound of the spiralized beet salad and the pulled pork. I’ll take pulled pork any day 🙂 I’ve never thought about spiralizing beets, this is a veggie I’ll have to add to my list of vegetables to spiralize at some point!
