Howdy friends! It’s been while since I’ve graced you with my internet presence. This post was supposed to go up Monday, but I had technical issue with the plugin I use for my recipes. I assumed it would work itself out by Tuesday. Nope. No luck yesterday either, and I can’t get a response from support. So I’ve had to suck it up and find a new plugin to use.
Since I missed my Monday post, let’s talk about the weekend for a bit. Did you have a nice one? Happy another was is arriving very soon? Last Friday (the 17th) was my mom’s birthday. Not just any birthday, but her 60th!
My mom loves surprises, yet never had a surprise party. So, of course we had to surprise her for such a milestone birthday! It was just a small dinner with family, but we had so much fun. Plus, my mom had absolutely no clue! The look on her face was priceless and is something I’ll never forget.
Before I get into today’s recipe, let me just show you the cake I made her. This cake took me close to 8 hours to make. Yes, you read that right! Mind you, I don’t really make cakes on the reg.. plus I was super meticulous because I wanted it to be perfect!
I wouldn’t say my decorating is perfect, but I do think it came out pretty darn good. The taste however, was on point! In case you are wondering, I followed this recipe from Life, Love, and Sugar. Well, I followed her method and used the icing and ganache, but I used my great grandmother’s chocolate cake recipe that I made gluten-free. It was a huge hit and not one person could tell it was gluten-free!
Ok now let’s talk about today’s recipe!
Honey Sriracha Beef Stir Fry
I know I said this about my last recipe, buuuuuut this one is also a favorite. I mean, honey and sriracha… with beef? YES.
If you’re not a beef eater, you can make this with chicken, pork, or even shrimp. All would be amazing. I whipped this up a few weeks ago on a whim when I had some beef in the fridge that I needed to use. Whenever I’m looking to use up any type of meat and veggies, I always go for a stir-fry.
In this case we have sirloin, zucchini, peppers, and carrots. Colorful and tasty… especially when drenched in a sweet and spicy sauce.
The first night that I made this, I sent a snapchat to all of my friends. They all wanted to know if it was on my blog! Kyle also said I needed to put this on the blog… so here I am sharing it with you. It also gave me an excuse to make it again. ?
I should also mention the leftovers are just as good reheated. It’s one of those dishes that get you super excited for lunchtime because you get to eat it again!
Speaking of, I really wish I had some to heat up right now! Do yourself a favor and make this one… trust me!

- 2 lbs. Sirloin Steak, cut into small strips
- Salt & Pepper
- ¼ Cup Beef Broth
- ¼ Cup Gluten-Free Soy Sauce
- 2 Tablespoons Honey
- 2 Tablespoons Sriracha
- 2 Garlic Cloves, very finely minced
- 2 Tablespoons Extra-Light Olive Oil, divided
- 1 ½ Tablespoons Cornstarch
- 1 Medium/Large Red Bell Pepper, cut into large dice
- 2 Medium/Large Carrots, peeled, halved, and thinly sliced
- 2 Small Zucchini, cut into ½-inch thick half-moons
- Cooked Rice or Cauliflower Rice, for serving

Place the cut steak into a bowl and season very generously with salt and pepper. Allow the meat to sit at room temperature while you prep your sauce and cut your vegetables.

Combine the beef broth, soy sauce, honey, sriracha, and garlic in a small pot. Bring to a simmer over low heat and reduce the sauce until it has slightly thickened, about 5-8 minutes.

Heat 1 tablespoon of the olive in a large skillet over high heat. Toss the beef with the cornstarch and add half of the beef to the hot skillet in an even layer. Leave the meat untouched for 1-2 minutes to get it nice and golden brown. Then, move it around the pan to continue browning on the other side. Transfer the beef to a plate and set aside. Repeat with the remaining oil and beef.

Once your beef is all browned and set aside, add the bell peppers and carrots to the pan and sauté for 3 minutes, or until just beginning to soften. Stir in the zucchini and cook for another 2-3 minutes or until the veggies are crisp tender.

Toss the beef (and it’s juices) with the vegetables and pour in the sauce. The sauce should immediately thicken up and coat the meat and vegetables. Turn off the heat and serve the stir fry over rice or cauliflower rice. Enjoy!

Anything with Sriracha in it makes my little heart sing. I’m always a little nervous to make beef stir. Every time I try my beef comes out chewy and inedible. I have no idea what I’m doing wrong, but I’m willing to try it again. What a beautiful cake you made for your Mother’s surprise birthday party. It’s really beautiful, almost too beautiful to eat… almost 🙂

I used to be the same way with beef stir fries, Mary! I always avoided them for that exact reason.. the trick is in the cornstarch! It gets that brown color fast so that you don’t overcook the beef, plus it helps keep the juices in. Thank you for the kind words on the cake – I was SO nervous making it! 🙂
