
Can you think of a better way to start a snowy Sunday morning than a big pile of crisp on the outside, soft and fluffy on the inside waffles? I know I can’t! Homemade waffles are fun and easy to make – yes, you need a waffle iron, but you can find one relatively cheap if you look around. I prefer to use the Belgian style waffle iron, but a classic will do too. The flavor of homemade waffles is superb to any frozen waffle you can buy, it’s definitely worth the extra effort to make your own.
This waffle recipe is another delicious one from my great-grandmother. You’ll notice in the recipe that you are to separate the eggs and beat the egg whites – this is what gives you a light and fluffy waffle, so be sure not to skip this step. I’m not sure if I have mentioned this before, but I’ve been going through all of my family recipes to make a recipe scrapbook. So, that’s why you have been seeing a lot of recipes from her – once I get through all of them, I’ll be moving on to other family members!
I love making a nice comforting breakfast in the winter and waffles are a great treat, and are especially perfect for a snow day! You can serve them with whipped cream, fruit toppings, or just go with the classic maple syrup and butter. No matter how you serve them up, they will be wonderful and greatly appreciated by your family!
Waffles
This recipe makes 4 Belgian style waffles and is easily doubled. Any leftovers you can wrap in plastic wrap and place in freezer bags to enjoy another time; just unwrap and crisp them up in the oven.
INGREDIENTS:
2 Cups Flour
1 Tsp. Sugar
½ Tsp. Salt
2 Tsp. Baking Powder
1 ½ Cups Milk
¼ Cup Butter, melted
2 Eggs, separated
DIRECTIONS:
Preheat waffle iron.
Mix together flour, sugar, salt and baking powder in a bowl. In a separate bowl, mix together milk, eggs, and melted butter. Slowly add dry ingredients until just combined. Beat egg whites until stiff and fold into batter.
Pour a ladle full of waffle batter (or whatever the directions to your iron specify) into the iron and cook until nicely golden. Serve and enjoy!
