The easiest pulled pork you’ll ever make! This slow cooker chipotle pulled pork takes little effort, but it’s full of flavor and can be used in a multitude of ways. {Whole30}Whole30 is in full swing in this house and though yesterday was rough, today is amazing. I have so much energy! I’ve been buzzing around like a busy little bee all day. I’m keeping track of what I’m eating for each meal as well as how I”m feeling every day. I plan on doing weekly updates on Sundays, so stay tuned for that!
This slow cooker chipotle pulled pork has been a life saver all week. We had two different meals, lunches, and I even ate some for a snack. It’s SO flavorful that you will forget you’re eating something healthy!
There is very little effort involved in this recipe – the slow cooker does most of the work. The pork marinates overnight before going into the slow cooker, but prep for the marinade is super simple. Grab a mini food processor (or regular one or a blender) and toss in onion, garlic, oil, orange juice, lime juice, chipotle pepper powder, cumin, paprika, oregano, salt, and pepper Blend it up until smooth, throw the pork in a bag and top with marinade.
The next morning, add the pork along with marinade right into your slow cooker and add a little chicken broth. Set it to low and forget about it for 8 hours. I love easy meals like that. Plus, your house will smell amazing!
If you’re not doing Whole30, canned chipotle peppers in adobo could be used in place of the ground chipotle pepper. That was my original thought for this recipe, but when I was shopping I noticed that the brand my store carries has added sugar. I panicked a little, but then remembered that ground chipotle pepper exists in the spice aisle. The flavor is just as good and the orange juice in the marinade helps to add a little sweetness. Crisis averted!
I have a few fun recipes to share with you next week featuring this delicious pork. In the meantime, I recommend just eating it with a spoon ?


- 1 Small Onion, peeled and cut into chunks
- 3 Cloves Garlic, peeled
- 1 Tablespoon Extra Light Olive Oil
- ½ Orange, juiced
- 2 Limes, juiced
- 3 Teaspoons Chipotle Pepper Powder
- 2 Teaspoons Paprika
- 1 Teaspoon Cumin
- 1 Teaspoon Oregano
- 1 Teaspoon Salt
- ½ Teaspoon Black Pepper
- 1 (3-4 lb.) Pork Loin*
- ¼ Cup Chicken Broth
- Combine the onion, garlic, olive oil, orange juice, lime juice, and spices in a mini food processor. Pulse until mostly smooth.
- Place the pork loin into a gallon zip-top bag and cover with marinade. Make sure the pork is coated well. Refrigerate the pork overnight.
- In the morning, place the pork along with marinade into the slow cooker and pour in the chicken broth.
- Cook the pork for 8 hours on low, or until you can easily shred it with a fork.
- *A pork shoulder will also work.

I like to smoke my pork butt/shoulders but this method for chipolte makes for an easier preparation for just a few people. I’ll still smoke it when I’m serving a crowd but add your sauce toward the end of smoking. I usually take the meat off at 190degrees and wrap in foil, so I might add the sauce at this point and then put the meat back on the grill until I reach my 200/205 goal. I usually allow 1/2 hr. To 1 hr resting before pulling( leaving the meat wrapped while it rests). I’m always looking for new ideas so your posts are a real treat, hope you continue after you get married……lucky guy

Hi Lori! Yes, the pork and marinade both go right in the slow cooker!
Will Chicken breast work for this as well?
Hi Ryan! Yes, chicken breast will for this. I would recommend using bone-in breasts with the skin on just for added moisture. However, I do think boneless skinless would work as well, you may just need to add more liquid to keep it from drying out! Let me know if you try it 🙂
How spicy is this recipe? Think it would be ok for my littles?
Hi Heather. I don’t think it’s that spicy, but I’d suggest halving the chipotle powder and see how that goes!
Tried this recipe, I found it to very mild. What needs to be done to give it more of a kick??
Hi Linda. If you want more smokiness add more chipotle pepper powder. For some heat you can add a few pinches of cayenne pepper to taste or even some jalapeños. If you aren’t doing Whole30, you can use canned chipotle peppers in adobo, which will add some additional heat and smokiness. Hope this helps 🙂

Hi there! Just curious, if you were to use the adobe peppers in chipotle sauce instead of chipotle powder would you change the amount you use?? and would you just use the sauce or the actual pepppers as well?? This sounds so yummy, I’m excited to try it!
Hi Jenny! I would use 1-2 Peppers with some of the sauce. You could totally do it to taste depending on the amount of heat you want. Hope you enjoy it! 🙂
Does this freeze well?
Yes! I freeze it all the time and works out perfectly.
Can you use pork chops for this as well? If so, how many? Can’t wait to try this!
I made the pork yesterday and it was delicious even without marinading overnight. Once the pork is done is it okay to freeze some for later use? I didn’t know if you had done that before and if it still tastes good.

Your recipe uses a 3 to 4 lb pork loin on Low for 8 hrs.
The Pork Shoulder Roast I’m using is 8 lbs., will 8 hrs. on Low still be good or do you think I need to increase the time?
I would say give it 10 hours, but check it at 8. If it pulls apart easy it’s done and then you can just keep it on warm until you’re ready to serve! Enjoy ?
Love, love, love this recipe! Thank you so much for making it and sharing it. I haven’t cooked it in the slow cooker yet b/c I’m home most days and braise this in the oven. I find that with the braising method I don’t need to marinate over night. I just make up the sauce while I brown the pork loin in my dutch oven, pour it over and pop it in the oven at 275 degrees for 4-5 hours. Amazing!!!

Curious if you have ever tried this recipe in an Instant Pot? I used to make it for my husband ALL THE TIME with the avocado aioli over baked sweet potatoes and we were obsessed with it. But I don’t have a slow cooker anymore, just an IP, and the first (and last) time I tried it in the IP, I totally messed it up! Would love to get it back in our meal rotation though!
