A fun recipe that uses my slow cooker chipotle pulled pork! Stuff the pork into lettuce wraps, top with sliced avocado and drizzle with the most delicious aioli.

Tell me these aren’t these prettiest looking lettuce wraps you’ve ever seen?! ?
They taste just as good as they look! I mean, how could they not be amazing when they are chock full of chipotle pulled pork? You won’t even believe that these are Whole30 compliant. And don’t worry if you aren’t doing a round of Whole30, you can totally still eat these. They are so full of flavor and just plain fun to eat!
Whenever I think of lettuce wraps, I think of P.F. Chang’s. If you’ve ever eaten there then you know about the lettuce wraps. If you don’t, do yourself a favor and order them next your there. They have gluten-free available! ?
The first time I ate at P.F. Chang’s was on trip to Atlantic City. I remember seeing everyone with the lettuce wraps, but didn’t order them. The next time I went, I was with my aunt and uncle, who before we even got there talked about the lettuce wraps. My uncle loves them so much that he made my aunt order her own because he wanted them all to himself! Kyle and I shared one and to this day we always order them when we go.
Needless to say, we are lettuce wrap fans. This chipotle pulled pork version is certainly no exception. Not only are they super delicious, but they are really simple. All you need is some of my slow cooker chipotle pulled pork, lettuce, sliced avocado, and the most amazing avocado aioli!
The avocado aioli tastes just like guacamole. Seriously, if liquid guacamole were a thing, this would be it. It adds even more flavor to the pork and cools things down a little – such a perfect combination! I’ve been putting the aioli on just about everything I can think of. Scrambled eggs, a burrito bowl that I made with cauliflower rice, and it makes a great dip for veggies!
I can’t wait to make these again – they make a great lunch, snack, and dinner. Heck, I’ll even eat these for breakfast! ?


- ½ an Avocado
- 2 Tablespoons Whole30 Mayonnaise*
- 1 Lime, juiced
- 1 Clove Garlic, finely minced
- Salt & Pepper, to taste
- Water, for thinning if necessary
- 1 Head Iceburg or Butter Lettuce, broken apart into lettuce cups
- 2 Cups Slow Cooker Chipotle Pulled Pork, warmed
- 1 Avocado, sliced
- Lime Wedges and Cilantro, for garnishing
- Mash the avocado and then whisk in the mayo, lime juice, garlic, salt, and pepper. If the aioli needs to be thinner, add a little bit of water until you can drizzle it easily.
- Pile the pork into the lettuce cups, top with sliced avocado, drizzle with the aioli and top with cilantro and lime.
- *If you're doing Whole30, this mayo is compliant. If you're able to find a store-bought mayo that complies you can certainly use that.

Hi Megan! I’m sorry, but I don’t have that info as I don’t count calories. You can easily plug the ingredients into any online calorie calculator to get the nutritional info! Enjoy 🙂

Hi Denise! Yes, you can use yogurt. I used paleo mayo here to keep this compliant with paleo and whole30, but if you aren’t following those go ahead and use Greek yogurt! 🙂
