Salmon filets are dredged in a flavorful spice mixture, cooked to perfection and served with a bright and zesty orange salad. Blackened salmon makes the perfect weeknight meal served over sautéed greens and rice!
Blackened salmon might just be my favorite way to eat salmon. Remember those blackened salmon tacos I shared a while back? Well this is a riff on those, but instead of mango salsa we are doing a bright and zesty orange salsa.
Funny thing is I shared those tacos in January (winter)…. with mango salsa. And now (summer) I’m sharing blackened salmon with orange salsa. Sounds a little backwards since orange would definitely be more appropriate for winter and the mango more appropriate for summer. But, I had an orange in my fridge and thought it would make a good topping for blackened salmon.
I was right. Real life around here, people!
The best part about this recipe is how quick and simple it is. It only takes a tiny bit of chopping for the orange salsa. Then, just mix up a few spices, dredge the salmon, and cook it up. I like to serve this over sautéed greens (kale is my fav) and rice. The salsa is quite saucy so the rice is perfect for soaking all of that juice up. Any grain would work well here – brown rice, farro, etc. It would also be great over quinoa.
The blackening spice really isn’t packed with heat (unless you want it to be!) so if you’re not into spicy, don’t worry. The spice mixture coats the salmon and makes a crust when you cook it. You end up with really juicy salmon that pairs just perfectly with that orange salsa.
If you’re looking for a healthy weeknight meal, look no further than this tasty blackened salmon!

In a medium bowl combine the diced oranges, onion, jalapeno, cilantro, salt, and pepper. Mix well and set aside.

Heat the olive oil in a skillet over medium heat until. Add the salmon filets and cook 3-5 minutes per side, or until the fish is just cooked through and flaky. Transfer the salmon to a plate and set aside.
-
Serve the salmon over the vegetable and grain of your choice and top with the salsa. A few squeezes of lime juice are always welcome, too. Enjoy!
Cook time includes time for making sides.

Salmon and Kale bowl looks absolutely delish! I’m currently experiencing “personal summers”, I’ve heard foods with high alkaline levels are helpful; I believe kale is high in alkaline. I will let you know what I think.
