Happy Friday the 13th everyone! I’m super excited because today is exactly 6 months until Kyle and I get married! ?
Yes, we are getting married on Friday (May) 13th. We actually started dating on a Friday the 13th way back when (we’ve been together since we were 13) and when we were deciding on a wedding date it just seemed like the perfect choice.
Anyway, it’s all starting to become real – my dress came in a few weeks ago and I got to try it on again (yay!), we recently met with the florist, and my hair/makeup trial is scheduled!
Ok enough wedding talk… for now ?
Let’s talk breakfast. After all, it is the most important meal of the day. These sweet potato noodle breakfast bowls are amazing. If you’re bored with your daily breakfast, you have to try this one.
The best part is that you can do the majority of the prepping ahead of time, so it’s perfect for busy mornings! I’ve said before how much I love make ahead breakfasts … because who wants to wake up and cook breakfast during the week? Not me!
On the weekend, or whenever else you have some time, just spiralize some sweet potatoes, sauté some onions and peppers, season it all up and then let it cool. Once it’s cool, pack it up into an airtight container and refrigerate. When you’re ready to eat in the morning, portion it out into a bowl (or bowls) and heat the noodles up while you fry up an egg. After only a few minutes you’ll be eating a delicious and fun breakfast.
Kyle topped his with salsa only, but I added sliced avocado to mine and a drizzle of my avocado aioli because I’m kind of obsessed with it.
No matter how you top it, it will be amazing. While this recipe is dairy-free, gluten-free, paleo, and Whole30, a little cheese and sour cream would be pretty wonderful on top. So, if you do dairy I totally recommend that!
You’ll get about 10 servings out of this recipe – enough for 2 people for 5 days. We usually eat the same thing for a week and then the next week change it up. It just makes morning much smoother. However, you can easily cut this down if you need to, or even double it if you need to feed more.
This is one thing you’ll want to get out of bed for – I promise!
Unless you’re not a crazy person like me… ?
- 2 Tablespoons Extra-Light Olive Oil
- 2 Tablespoons Ghee, (or olive oil)
- 1 Large Onion, thinly sliced
- 1 Red Bell Pepper, thinly sliced
- Salt & Pepper, to taste
- 4 Medium-Large Sweet Potatoes, peeled and made into noodles with a spiralizer
- ½ Teaspoon Paprika
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Chili Powder
- ¼ Teaspoon Cumin
- Fried Eggs
- Sliced Avocado
- Salsa (make sure it’s sugar free for Paleo/Whole30!)
- Fresh Cilantro
- Heat one tablespoon each of the olive oil and ghee in a large skillet over high heat. Add in the onion and bell pepper and cook for about 5 minutes, or until soft and lightly caramelized. Season the mixture with salt and pepper and then transfer to a plate or bowl and set aside.
- Melt the remaining oil and ghee in the same skillet and add in the sweet potato noodles. Sauté for 1 minute and then add a ¼ cup of water to the skillet and cover. Let the potatoes cook for 3 minutes. (If you don’t have a large skillet, you may have to do this in two batches).
- Remove the lid and season the sweet potatoes with salt, pepper, and the paprika, garlic powder, chili powder, and cumin. Toss well and stir in the onions and peppers.
- Top the noodles however you’d like – a fried egg, avocado slices, salsa and fresh cilantro!

This looks amazing, I just have one question. After you cook the sweet potatoes in the water are you supposed to drain them or will the liquid be absorbed? Thanks!

Hi Alyssa! You don’t have to drain them, the majority of the liquid will be absorbed. Any remaining liquid will evaporate as you stir in the seasonings and add the peppers and onions back in. Hope this helps! Enjoy 🙂
