It’s national zucchini day, guys! You all know how much I love zucchini, so obviously I have to celebrate. These recipes go far beyond zucchini bread, which of course is super tasty, but one can only make so much zucchini bread!
Since I’m still recovering from the weekend, I’ll keep this short and jump right into my top 5 favorite zucchini recipes!
Zucchini Rolls

I can’t share my favorite zucchini recipes without including these zucchini pancakes. This recipe is, by far, the zucchini recipe I make the most! I could make these in my sleep – that’s how often we have them during the summer. I think I need to make a batch in celebration of national zucchini day. You should too! ?

Whaaaa? Um how did I not know today was national zucchini day?! Thankfully I had some zucchini noodles for lunch, so I guess I celebrated without even knowing! lol. HAD I known, I would have celebrated in style with one of these fabulous recipes! You sure know your way around a zucchini, Keri! All of these look incredible!
