A fun way to eat healthy is with this delicious spiralized potato breakfast pizza! It’s simple to make and can be made ahead of time, which makes it great for busy mornings.
{Whole30, Dairy-Free, Gluten-Free, & Paleo (if you use sweet potatoes!)}

I keep forgetting it’s halloween. Confession: I have never liked halloween. I really want to like it, but I just don’t. Even as a kid! I didn’t like dressing up and going trick or treating and I never really liked candy, so it wasn’t enjoyable for me.
The funny thing is, I had some pretty cool costumes over the years because my mom always went all out for us. She used to dress up with us (us being my sister and I), which was always nice. My first halloween I was just over a month old, so I was a little banana, my mom was a pear, and my sister was an apple. Another year we were fairies, which was probably my favorite. My least favorite was the year we were pirates – everyone loved it… except for me!

Enough halloween talk… let’s talk breakfast pizza!
I’m sure you all know how much I love spiralizing veggies. My Sweet Potato Noodle Breakfast Bowl is one of my most popular recipes, so I figured I’d go along with that and make a pizza! Who doesn’t want pizza for breakfast?
You can really top this potato pizza however you want – it doesn’t necessarily have to be for breakfast. I went with breakfast toppings because I think the hardest thing when you’re doing a Whole30 is coming up with exciting breakfast ideas.
If you’re not doing a Whole30 and you eat dairy, I think this would be extra delicious with some cheese thrown in there! ?
Another great thing about this recipe is that it can be a make-ahead breakfast option. You can make the potato pizza, cool it completely and then wrap it and keep it in the fridge. When you’re ready for breakfast each morning, just heat up a slice and then top it. I chose to top mine with scrambled eggs, but to speed things up you could top it with a fried egg.
I’d also like to mention that this recipe can easily be modified for a Paleo diet – simply use sweet potatoes in place of regular potatoes!
We enjoyed this all week long for breakfast, so much so that I think I’m going to make it again. I’m pretty sure I say this in every breakfast-related post, but I hate getting up and making breakfast. It’s the LAST thing I want to do when I wake up! So, I love having something that I can just heat up or easily grab to avoid creating a ton of dishes to wash.
It always comes back to washing dishes! ?

- Extra-Light Olive Oil, for drizzling
- 3 Medium Yukon Gold Potatoes, scrubbed and spiralized
- 1 Small Onion, grated
- ½ Teaspoon Paprika
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Oregano
- Salt & Pepper
- 2 Eggs, lightly beaten
- 3 Eggs, well beaten
- 1 Avocado
- ½ Lime, juiced
- Salt & Pepper
- Salsa
- Fresh Cilantro, for garnish
- Heat a 10-inch skillet over medium-high heat and drizzle in a little bit of olive oil. Add half of the spiralized potatoes and sauté for 3-4 minutes, or just until they start to soften. Transfer the potatoes to a large bowl and repeat with the other half of the potatoes. Let the potatoes cool.
- Add the grated onion, paprika, garlic powder, and oregano to the bowl with the potatoes. Season the potatoes generously with salt and pepper and toss in the beaten eggs.
- Preheat the oven to 400º.
- Heat more olive oil in the same skillet over medium-high heat. Once the pan is hot, add in the potato mixture and press it down with a spatula. Let it cook for 5-8 minutes, or until the bottom is brown and crisp. Invert the potato pizza onto a plate by placing a plate over the pan and flipping it – use oven mitts to prevent burning yourself!
- Add a little more olive oil and slide the potato pizza back into the pan. Cook for 3-5 minutes on this side and then transfer to the oven so the potatoes can continue to cook through.
- Bake the potato pizza for 8-10 minutes.
- While your pizza is in the oven, prepare your toppings.
- Heat a small skillet over low heat and add some light olive oil. Scramble the eggs until cooked to your liking.
- Mash the avocado with the lime juice and season with salt and pepper.
- Top your pizza by spreading it with the mashed avocado, and then top it with the scrambled eggs, salsa, and some fresh cilantro.
- To make this ahead, simply make the potato pizza and let it cool completely. You can then heat up a slice each morning and top it. Instead of scrambled eggs, you could top with a fried egg to make things a little quicker.
