15 recipes to make this summer using the season’s best produce.

Summer is my favorite season. Always has been and always will be! I love the relaxed feeling, beach days, and even the heat. Most importantly I love the food. Summer has all of my favorites… sweet corn to zucchini, blueberries, peaches, and especially tomatoes. There’s nothing quite like a fresh-from-the-vine tomato.

These 15 recipes are my favorites and on repeat around here all summer long. Enjoy that produce to the fullest and get cooking!

1) Roasted Cherry Tomato Pasta

I would be remiss if I didn’t include my favorite pasta dish. Seriously, this is my signature summer meal and everyone I make it for loves it. The caveat to this recipe is that you need the best cherry tomatoes you can find. It’s lackluster with out-of-season cardboard-tasting tomatoes. Trust me. Find the good tomatoes! My personal favorite are “sweet 100s” – I plant them every single year and make endless batches of this sauce for my freezer.

2) Blueberry Lemon Scones

Of course I have to include a scone recipe. And this one just happens to be my all time favorite.

3) Crispy Zucchini Tacos

Nothing says summer more than these vegetarian tacos. They are chock full of the best summer produce (zucchini, sweet corn, and tomatoes) and the chipotle aioli adds the perfect amount of spice.

4) Roasted Corn with Pesto Butter

Simple roasted corn gets covered in a pesto compound butter for a to-die-for side dish.

5) Salmon Burgers

These burgers have been a favorite around here forever. The basil green goddess dressing and big juicy tomato slice make these extra summery.

6) Puffed Quinoa, Fruit, and Yogurt Parfaits

The ultimate summer breakfast! These parfaits are so easy and you can add whatever fruits are in season. Blueberries and peaches are my favorite combo!

7) Mediterranean Shrimp Salad

Shrimp, veggies, and pasta get tossed with my favorite basil vinaigrette for the ultimate summer salad. This one will make you feel fancy with little effort.

8) Roasted Corn and Chorizo Zucchini Boats

A good way to use up some of those garden zucchini! These zucchini boats are packed with flavor and fun to eat, plus they are super simple to make.

9) Coconut Shrimp Taco Bowls

These taco bowls are so colorful, full of texture, and are guaranteed to transport you somewhere tropical.

10) Summer Vegetable Chowder

Full of corn, zucchini, and a hint of basil pesto, this chowder is summer in a bowl.

11) Grilled Salmon with Roasted Tomato Butter

The roasted tomato butter is my fridge all summer long – it makes a great topping for all kinds of meats, veggies, and even pasta. Grilled salmon is definitely my favorite, though.

12) Summer Vegetable Curry

There is just something about this curry that makes me swoon. The combo of the heat from the curry and the sweet tomatoes is out of this world. It’s a versatile recipe in that you can switch up the veggies and protein for whatever your favorites are.

13) Chipotle BBQ Pulled Pork Tacos

Pulled pork is a classic summer party food. These tacos take it to the next level with a delicious chipotle bbq sauce and cilantro lime slaw.

14) Blueberry Cobbler

One of the easiest desserts you’ll ever make! Toss some fruit in a baking dish, mix up the topping, and bake – it’s truly that simple.

15) S’Mores Cheesecake

A drool worthy cheesecake that tastes like everyone’s favorite summer treat – the s’more! And it doesn’t require a smelly campfire.

    Wow Keri, you gave me so much ideas for my summer vacation with your gorgeous recipes here and I may even forget to leave my kitchen for a few weeks until I try them all ;-). It’s something nice to do during a lockdown too.

    I can’t actually stop looking at your wonderful photos. Do you mind sharing what camera you are using? Mine is a few years old and I’m looking for a replacement with a new (hopefully better) model.
