Hello friends! Did you all have a nice weekend? My mom came to visit so we could go shopping to find her something to wear for my wedding. Which, by the way, is 5 MONTHS AWAY (as of yesterday). Time is flying.
Anyway, since the mall is absolute craziness this time of year, we wanted to go early and try to beat the crowd. Holiday hours means a mall that opens at 9am, so off we went to start the search! Before we left I told Kyle we would be back by noon and he laughed.
Well, we ended up finding a beautiful dress at our first stop, PLUS two options for the rehearsal! Not bad, eh? I don’t even have anything yet for the rehearsal!
Since we had so much extra time to spare, we were able to hit up a few other stores, get out without any traffic backups, and made it home at 12:00 on the nose. I’ve always been a pro at timing ?.
I made these for lunch, we went for ice cream (wearing spring clothes because it was 70º) and then had a relaxing evening. Overall we had a wonderful weekend, but it went by way too fast. ?
I know I’m a broken record here, but can you believe Christmas is less than 2 weeks away?! First of all, the weather is insane. We had our AC on yesterday… with the tree lights on. So strange. Anyway, if you’re not in holiday mode yet, you better get there!
Today’s recipe is a new way to enjoy everyone’s favorite side dish: mashed potatoes. I love mashed potatoes probably a lot more than I should. I’m all about the classic version – super creamy, smooth, and full of butter. Get that recipe here.
Anyway, it’s fun to change things up every now and then. This roasted potato and turnip mash is sure to do just that! If you’ve never had turnips before, they are mild in flavor and slightly bitter, but become sweet when roasted. They have that typical root vegetable taste and pair perfectly with potatoes!
I simply toss peeled and cubed potatoes and turnips on a baking sheet with olive oil, salt, and pepper. Roast them until golden and tender, then whip ’em up with milk, butter, and fresh thyme. Because you’re roasting the vegetables, the texture won’t be as smooth as your typical mashed potatoes. However, it really works! It’s creamy, full of amazing flavor, and you’ll get a few crispy bits in your mash. I love those crispy bits.
So, if you want to mix up your sides for Christmas, I encourage you to try this roasted potato and turnip mash. It will pair perfectly with roast turkey, glazed ham, or whatever meat you’re serving!
- 6 Yukon Gold Potatoes (medium in size), peeled and cubed
- 2 Turnips, peeled and cubed
- 2 Tablespoons Extra-Light Olive Oil
- Salt & Pepper
- ½ Cup Whole Milk, warmed
- 2 Tablespoons Butter, melted
- 1 Sprig Fresh Thyme, leaves removed from stem and finely chopped
- Preheat the oven to 400º.
- Place the potatoes and turnips on a baking sheet in a single layer, drizzle them with olive oil and season with salt and pepper. Roast the vegetables for 20 minutes. Then, remove the pan from the oven, stir the veggies and continue roasting for 20 minutes longer. The potatoes and turnips will be tender and lightly golden brown when finished.
- Transfer the veggies to the bowl of a stand mixer fitted with the paddle attachment. Whip the potatoes on medium speed until creamy, but so you still have some chunks. Turn the mixer down to low speed and add in the milk, melted butter, and thyme leaves. Taste the mash and season with additional salt and pepper to taste, if necessary.
- Serve!
- This recipe can easily be multiplied for more servings.
